Juice the kiwis you have in the extractor, or if you do not have one of these a high speed blender like a vitamix or any method of juice extraction. Juice extractors are best for this job. These machines chew the fruit and get all the juice out of whatever you put through. You do not have to peel them, but cut them into fourths. After collecting the juice, strain through a super bag to remove all pulp, seeds, hairs. You do not have a super bag, use a cheesecloth or any super fine mesh strainer. Take your strained juice and weigh on your gram scale. Add sugar by weight to the liquid to make a 1:1 syrup. Blend until the sugars are fully dissolved in the juice. You will know when this is happening by watching the blender hit a vortex and over time the texture will change. It goes from thin juice to silky, slick syrup.
