- 150 grams frozen/fresh strawberries
- 500 grams white sugar
- 500 grams water
- 2 grams citric acid (optional)
- Immersion Circulator
- Water Bath
- Large Ziploc/Vacuum Bag
- Digital Scale
Weigh out all ingredients and add to a large ziploc or vacuum sealable bag. Burp out all the air if using a ziploc. Start a water bath in a large enough vessel to submerge your immersion circulator. Turn the circulator to 135 F and hold the temperature for 2 hours. Submerge the syrup bag in the water bath and use weights/clips if necessary to keep the bag submerged and stable. After 2 hours of a bath strain all the ingredients and quart. You can take the leftover strawberries and dehydrate them for a nice snack, or puree them and spread on a silicon mat in the dehydrator for a fruit leather.
